Ingredients:

For the Stuffed Squash:

  • 2 medium acorn or butternut squashes, halved and seeded
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth

  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts or pecans

Instructions:

1. Prepare the Squash:
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Brush the cut sides of the squashes with olive oil and season with salt and pepper.
3. Place the squashes cut side down on the baking sheet and roast for 30-40 minutes, until tender.
