This creamy and comforting Mushroom Risotto is a classic Italian dish, rich in savory flavors and perfect for a cozy dinner night. Arborio rice slowly cooked with mushrooms, garlic, and Parmesan cheese results in a hearty meal that is perfect for mushroom lovers.

### Ingredients:
– 1 1/2 cups Arborio rice
– 8 cups vegetable or chicken broth
– 2 cups mushrooms, sliced (cremini, button, or a mix)
– 1 small onion, finely chopped
– 3 cloves garlic, minced
– 1/2 cup dry white wine
– 1 cup Parmesan cheese, grated
– 2 tablespoons olive oil
– 2 tablespoons butter
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)

### Instructions:

1. **Prepare the Broth**:
– In a medium saucepan, bring the vegetable or chicken broth to a low simmer. Maintain the simmer throughout the cooking process.

2. **Cook the Mushrooms**:
– In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
– Add the sliced mushrooms and sauté until they are browned and any liquid has evaporated (about 5-7 minutes). Season with a pinch of salt and pepper.
– Remove mushrooms from the skillet and set aside.

3. **Prepare the Risotto Base**:
– Using the same skillet, add the remaining olive oil and 2 tablespoons of butter. Over medium heat, sauté the chopped onion until it’s soft and translucent (about 5 minutes).
– Add the minced garlic and cook for another minute until fragrant.

4. **Cook the Arborio Rice**:
– Add the Arborio rice to the skillet, stirring to coat the grains with oil and butter.
– Cook the rice for about 2 minutes until it begins to toast slightly.

5. **Deglaze with Wine**:
– Pour in the dry white wine and stir until the liquid is mostly absorbed by the rice.

6. **Add the Broth**:
– Begin adding the warm broth, one ladleful at a time, stirring constantly. Wait until the liquid is almost fully absorbed before adding the next ladleful.
– Continue this process until the rice is creamy and al dente (about 18-20 minutes).

7. **Combine with Mushrooms**:
– Stir back in the sautéed mushrooms.
– Add the grated Parmesan cheese, stirring until melted and fully incorporated.
– Season with salt and pepper to taste.

8. **Serve**:
– Serve the risotto hot, garnished with freshly chopped parsley and a sprinkle of extra Parmesan cheese if desired.
