– 1.5 pounds Brussels sprouts, trimmed and halved
– 3 tablespoons olive oil
– 1 tablespoon fresh rosemary, chopped
– 1 tablespoon fresh thyme, chopped
– Salt and pepper to taste
– 1/4 cup balsamic vinegar
– 1 tablespoon honey or maple syrup
– 1/4 cup grated Parmesan cheese (optional)

1. Preheat your oven to 400°F (200°C).

2. In a large mixing bowl, toss the Brussels sprouts with olive oil, rosemary, thyme, salt, and pepper. Make sure the Brussels sprouts are evenly coated with the herbs and oil.

3. Spread the Brussels sprouts in a single layer on a baking sheet. Make sure there is enough space between them so they roast properly.

4. Roast in the preheated oven for 25-30 minutes, or until the Brussels sprouts are golden brown and crispy on the edges. Stir halfway through to ensure even roasting.

5. While the Brussels sprouts are roasting, prepare the balsamic glaze. In a small saucepan, combine the balsamic vinegar and honey (or maple syrup). Bring to a boil, then reduce the heat and let it simmer for about 5-7 minutes, or until the mixture has thickened to a syrupy consistency. Remove from heat and let cool slightly.

6. Once the Brussels sprouts are done, transfer them to a serving dish. Drizzle the balsamic glaze over the top, and if desired, sprinkle with grated Parmesan cheese.

7. Serve immediately and enjoy your delicious herb-roasted Brussels sprouts with balsamic glaze!
