This delightful Flexitarian Tofu Stir-Fry combines the best of plant-based proteins with a vibrant array of vegetables. ### Ingredients ###
For the Tofu:
– 1 block of firm tofu, pressed and cubed
– 2 tablespoons soy sauce
– 1 tablespoon cornstarch

For the Stir-Fry:
– 2 tablespoons vegetable oil
– 1 red bell pepper, thinly sliced
– 1 yellow bell pepper, thinly sliced
– 1 green bell pepper, thinly sliced
– 1 medium carrot, julienned
– 1 small broccoli, cut into florets
– 3 cloves garlic, minced
– 1 tablespoon ginger, minced
– 1/2 cup snap peas, trimmed
– 2 teaspoons sesame oil
– 2 tablespoons soy sauce
– 1 tablespoon hoisin sauce
– 1 teaspoon rice vinegar

Optional Garnishes:
– Sesame seeds
– Chopped green onions

### Instructions ###
1. Prepare the Tofu:
Begin by pressing the tofu to remove excess water. Cut the tofu into 1-inch cubes. In a bowl, mix the soy sauce and cornstarch. Add the tofu cubes and gently toss until well-coated. Set aside.

2. Cook the Tofu:
Heat a non-stick skillet over medium-high heat. Add 1 tablespoon of vegetable oil. Once hot, add the tofu cubes and cook until golden brown and crispy on all sides, about 3-4 minutes per side. Remove the tofu and set aside.

3. Stir-Fry the Vegetables:
In the same skillet, add the remaining tablespoon of vegetable oil. Add the garlic and ginger, and sauté for about 30 seconds until fragrant. Then add the bell peppers, carrot, and broccoli. Stir-fry for about 5 minutes until the vegetables are tender-crisp. Add the snap peas and stir-fry for another 2 minutes.

4. Combine and Flavor:
Return the cooked tofu to the skillet. Add the sesame oil, soy sauce, hoisin sauce, and rice vinegar. Toss everything together and cook for another 2 minutes until everything is well-coated and heated through.

5. Serve:
Transfer the stir-fry to a serving dish. Garnish with sesame seeds and chopped green onions if desired. Serve hot over steamed rice or noodles.
