Ingredients:

For the Za’atar Roasted Chicken:

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons za’atar seasoning

  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

For the Herbed Tahini Sauce:

  • 1/2 cup tahini
  • 1/4 cup water
  • 1 clove garlic, minced
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • Salt and black pepper, to taste

Instructions:

  1. Marinate the Chicken: In a large bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, za’atar seasoning, salt, and black pepper. Add the chicken thighs and toss to coat evenly. Cover and refrigerate for at least 1 hour, or up to overnight for best results.
