Ingredients:

– 2 cups long-grain rice
– 1 lb lamb or beef, cut into small cubes
– 1/2 cup vegetable oil
– 2 large onions, thinly sliced
– 3 carrots, julienned
– 4 cloves garlic, whole
– 1 tablespoon cumin seeds
– 1 teaspoon ground coriander
– 1 teaspoon paprika
– 1/2 teaspoon turmeric
– Salt and pepper to taste
– 4 cups water or beef broth

Instructions:

Step 1: Rinse the rice until the water runs clear to remove excess starch. Soak the rice in water for 30 minutes, then drain.

Step 2: Heat the vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the meat and cook until it’s browned on all sides. Remove the meat and set it aside.

Step 3: In the same pot, add the onions and cook until they’re golden brown. Then, add the carrots and cook for another 5-7 minutes until they begin to soften.

Step 4: Return the meat to the pot, along with the cumin seeds, ground coriander, paprika, turmeric, and garlic cloves. Stir well to combine all the ingredients and cook for an additional 2-3 minutes to let the spices bloom.

Step 5: Spread the rice evenly over the meat and vegetables, but do not stir. Carefully pour the water or broth over the rice, making sure the rice is fully covered. Add salt and pepper to taste.

Step 6: Bring the liquid to a boil, then reduce the heat to low. Cover the pot with a tight-fitting lid and let it simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.

Step 7: Once the rice is cooked, remove the pot from the heat and let it sit, covered, for an additional 10 minutes. This allows the flavors to meld together.

Step 8: Gently fluff the rice with a fork, mixing it with the meat and vegetables. Serve your Uzbek Plov hot, garnished with fresh herbs if desired.
