– 8 large eggs

– 1 cup fresh spinach, chopped
– 1 cup mushrooms, sliced
– 1/2 cup grated Parmesan cheese
– 1/2 cup shredded mozzarella cheese
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 2 tablespoons olive oil
– Salt and pepper to taste
– A handful of fresh parsley, chopped (optional)

Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a large bowl, whisk together the eggs and milk until well combined. Set aside.
