Ingredients:

  • 2 tablespoons olive oil
  • 1 large Vidalia onion, diced
  • 3 cloves garlic, minced
  • 1 large bunch of kale, stems removed and leaves chopped
  • 4 cups vegetable broth
  • 1 large potato, peeled and cubed
  • 1 cup heavy cream
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • Salt and freshly ground black pepper, to taste
  • Crusty bread, for serving (optional)

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the diced Vidalia onion and sauté until soft and translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute, stirring frequently to prevent burning.
  3. Stir in the chopped kale and cook until wilted, about 4-5 minutes.
  4. Add the cubed potato and vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the potato is tender.
  5. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup in batches to a regular blender and blend until smooth. Return the soup to the pot.
  6. Stir in the heavy cream, fresh thyme, and rosemary. Simmer for an additional 5 minutes to let the flavors meld together.
  7. Season with salt and freshly ground black pepper to taste.
