Ingredients:
– 4 boneless, skinless chicken breasts
– Salt and pepper, to taste
– 2 tablespoons olive oil
– 1 tablespoon butter
– 1 medium onion, finely chopped
– 3 garlic cloves, minced
– 250 grams (about 2 cups) sliced mushrooms (such as cremini or button)
– 1 teaspoon dried thyme
– 1 teaspoon dried oregano
– 1 cup chicken broth
– 1 cup heavy cream
– 1/2 cup grated Parmesan cheese
– Fresh parsley, chopped (for garnish)
Instructions:
1. Season the chicken breasts with salt and pepper on both sides.
2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
3. In the same skillet, add the butter. Once melted, add the finely chopped onion and cook until it becomes translucent, about 2-3 minutes.
4. Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are tender and any liquid has evaporated, about 5-7 minutes.
5. Stir in the dried thyme and oregano. Cook for another minute to let the herbs release their flavors.
6. Pour in the chicken broth, scraping up any brown bits from the bottom of the skillet. Let it simmer for a few minutes to reduce slightly.
7. Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Cook until the sauce thickens, about 3-5 minutes.
8. Return the chicken breasts to the skillet, spooning some of the sauce over the top. Let it simmer for a couple of minutes to ensure everything is heated through.
9. Garnish with chopped fresh parsley before serving.
