- 1 pound skinless, boneless chicken thighs, cut into bite-sized pieces

- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes
- 2 cups okra, sliced
- 2 teaspoons Cajun seasoning
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
- Cooked white rice, for serving
- 1/4 cup fresh parsley, chopped

Instructions:
