For the Spring Rolls:1. Bring a pot of water to a boil. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Remove from water, let cool, and slice in half lengthwise.2. In the same pot, cook the rice vermicelli noodles according to package instructions. Drain and rinse with cold water.3. Prepare a large bowl of warm water. Dip one rice paper wrapper into the water for about 5 seconds to soften. Lay it flat on a clean surface.4. On the lower third of the wrapper, place a small handful of rice noodles, some carrot, cucumber, lettuce, and herbs. Top with 2-3 shrimp halves.5. Fold the sides of the wrapper over the filling, then roll tightly from the bottom up. Repeat the process with the remaining wrappers and fillings.
