1. Marinate the Lamb:1. In a large mixing bowl, combine the lamb pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt.2. Mix well to coat the lamb pieces evenly. Cover and refrigerate for at least 2 hours, or overnight for best results.

2. Prepare the Rice:1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.2. In a large pot, bring 4 cups of water to a boil. Add the drained rice, bay leaf, green cardamom pods, cloves, cinnamon stick, and salt.3. Cook the rice until it is 70% done (it should still be slightly firm to the bite). Drain and set aside.
