  • 1 cup kimchi, chopped
  • 1/2 cup kimchi juice
  • 1/2 onion, diced
  • 1/2 cup mixed vegetables (peas, carrots, corn)
  • 2-3 cloves garlic, minced
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp gochujang (Korean chili paste)
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 2-3 eggs (optional)
  • Salt and pepper to taste
  • 1 tbsp sesame seeds (optional for garnish)

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced onion and minced garlic to the skillet, stirring frequently until they become fragrant and translucent.
  3. Add the chopped kimchi to the skillet and cook for 3-4 minutes until it starts to caramelize slightly.
  4. Stir in the mixed vegetables and cook for another 2-3 minutes until they are tender.
  5. Push the vegetables to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until they are fully cooked, then mix them with the vegetables.
  6. Add the cooked rice to the skillet, breaking up any clumps with a spatula, and mix it thoroughly with the vegetables and eggs.
  7. Pour in the kimchi juice, soy sauce, and gochujang. Stir everything together until the rice is evenly coated with the sauce.
  8. Drizzle the sesame oil over the rice mixture and continue to stir for another 2-3 minutes until everything is heated through.
  9. Season with salt and pepper to taste. Remove the skillet from heat and stir in the chopped green onions.
  10. Serve the Kimchi Fried Rice hot, garnishing with sesame seeds if desired.
