Ingredients:- 2 cups of long-grain parboiled rice- 1/4 cup of vegetable oil- 1 large onion, chopped- 1 red bell pepper, chopped- 1 yellow bell pepper, chopped- 3 cloves of garlic, minced- 3 large tomatoes, blended or finely chopped- 1/4 cup of tomato paste- 2 cups of chicken or vegetable broth- 1 teaspoon of dried thyme- 1 teaspoon of curry powder- 1 teaspoon of paprika- 1 bay leaf- 1/2 teaspoon of ground white pepper- Salt to taste- 1 cup of mixed vegetables (peas, carrots, green beans)- 2 cups of pre-cooked, diced chicken or beef (optional)- Fresh parsley or cilantro for garnish
