  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • 1 pound raw shrimp, peeled and deveined
  • Salt and black pepper to taste
  • 2 green onions, sliced (for garnish)

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chicken thighs to the pot and cook until browned. Remove and set aside.
  3. Add the Andouille sausage slices to the pot and cook until browned. Remove and set aside with the chicken.
  4. In the same pot, add the onion, bell peppers, and celery. Cook until softened, about 5 minutes.
  5. Add the garlic and cook for another minute until fragrant.
  6. Stir in the diced tomatoes, rice, chicken broth, smoked paprika, thyme, oregano, and cayenne pepper (if using). Mix well.
  7. Return the chicken and sausage to the pot. Bring to a simmer.
  8. Reduce heat to low, cover, and cook for 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid.
  9. Stir in the shrimp and cook for an additional 5 minutes, or until the shrimp are pink and cooked through.
  10. Season with salt and black pepper to taste.
  11. Garnish with green onions and chopped parsley before serving.
