  • 1 lb boneless, skinless chicken thighs
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, peeled and diced
  • 2 stalks celery, chopped
  • 6 cups chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 2 tsp fresh thyme leaves
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped (optional)

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onions, carrots, and celery. Cook, stirring occasionally, until the vegetables begin to soften, about 5-7 minutes.
  2. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Push the vegetables to the side of the pot and add the chicken thighs. Cook the chicken until browned on both sides, about 5 minutes per side. Once browned, remove the chicken from the pot and set aside.
  4. To the pot, add the chicken broth, diced tomatoes, thyme, rosemary, and bay leaves. Bring to a boil.
  5. Once the broth is boiling, return the chicken to the pot and reduce the heat to a simmer.
  6. Cover and let the soup simmer for 25-30 minutes, or until the chicken is cooked through and tender.
  7. Remove the chicken from the pot once more, shred it using two forks, and return the shredded chicken to the pot.
  8. Add the cannellini beans and season the soup with salt and pepper to taste. Continue to simmer for another 10 minutes to allow the flavors to meld together.
  9. Remove the bay leaves before serving.
  10. Serve hot, topped with grated Parmesan cheese and freshly chopped parsley if desired.
