  • 2 cups dried yellow split peas, rinsed and drained
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 parsnips, diced
  • 1 small rutabaga, peeled and diced
  • 4 cups vegetable or chicken broth
  • 4 cups water
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (optional, for serving)

  1. In a large pot, heat a little oil over medium heat. Add the chopped onions and sautΓ© until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrots, parsnips, and rutabaga. SautΓ© for another 5-7 minutes until the vegetables start to soften.
  3. Add the yellow split peas, vegetable or chicken broth, and water to the pot.
  4. Add the bay leaves, dried thyme, and dried rosemary. Stir well to combine all the ingredients.
  5. Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 1-1.5 hours until the split peas are tender and the soup has thickened. Stir occasionally to prevent the peas from sticking to the bottom of the pot.
  6. Once the soup has reached your desired consistency, remove the bay leaves. Season with salt and pepper to taste.
  7. Ladle the soup into bowls and garnish with fresh parsley. Serve with lemon wedges on the side, if desired, for a zesty kick.
