  • 1/4 teaspoon salt
  • 1 cup chopped fresh parsley
  • 1/2 cup chopped fresh mint

  • 1 cucumber, diced
  • 1/4 cup fresh lemon juice
  • 1/4 cup extra virgin olive oil

  1. Combine the quinoa, water, and 1/4 teaspoon of salt in a medium saucepan. Bring to a boil over medium-high heat, then reduce to a simmer and cover. Cook until the quinoa has absorbed all the water, about 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and let cool completely.
  2. In a large bowl, combine the cooled quinoa, parsley, mint, green onions, tomatoes, and cucumber.
