For the crust:- 1 1/2 cups (180g) digestive biscuits or graham crackers, crushed- 1/4 cup (50g) sugar- 1/2 cup (115g) unsalted butter, melted
For the lemon jelly filling:- 1 cup (240ml) lemon juice (freshly squeezed is best)- 1 cup (240ml) water- 1 1/4 cups (250g) sugar- 4 tablespoons (40g) cornstarch- 1 tablespoon lemon zest- 4 large egg yolks- 1/4 teaspoon salt- 2 tablespoons unsalted butter- 2 packets (14g total) unflavored gelatin- 1/4 cup (60ml) cold water
Instructions:
1. Prepare the crust:1. Preheat your oven to 350Β°F (175Β°C).2. In a medium bowl, combine the crushed digestive biscuits (or graham crackers) with the sugar and melted butter.3. Press the mixture into the bottom and up the sides of a 9-inch tart pan with a removable bottom.4. Bake the crust for 10 minutes, then let it cool completely on a wire rack.
2. Prepare the lemon jelly filling:1. In a saucepan, combine the lemon juice, water, sugar, cornstarch, lemon zest, egg yolks, and salt. Whisk to combine and cook over medium heat, stirring constantly until the mixture thickens and comes to a boil.2. Once boiling, continue to cook for an additional 1-2 minutes, then remove from heat. Stir in the butter until fully melted and incorporated.3. In a small bowl, sprinkle the unflavored gelatin over the cold water and let it sit for about 5 minutes to bloom.4.
