1. Prepare the chicken:
Season the chicken pieces with salt and pepper. In a large bowl, mix the flour and cornstarch together. Gradually add cold water to the mixture, stirring until you have a smooth batter.

In a large pot or deep fryer, heat the vegetable oil to 350Β°F (175Β°C).
3. Fry the chicken:
Dip each piece of chicken into the batter, allowing any excess to drip off. Fry the chicken in batches until golden brown and crispy, approximately 8-10 minutes per batch. Remove the chicken and let it drain on a paper towel-lined plate.
