Za’atar Roasted Chicken is a flavorful and aromatic dish that combines the tangy, herby blend of za’atar seasoning with tender, juicy roasted chicken. Paired with herbed roasted vegetables, this dish provides a well-balanced meal full of rich flavors and wholesome ingredients. Perfect for a cozy dinner, this dish is both satisfying and relatively easy to prepare.

Ingredients:

For the Chicken:

– 1 whole chicken (about 4-5 lbs)
– 3 tablespoons za’atar seasoning
– 2 tablespoons olive oil
– 1 teaspoon salt
– ½ teaspoon black pepper
– 2 lemons, thinly sliced
– 4 cloves garlic, minced

For the Vegetables:

– 4 carrots, peeled and cut into 2-inch pieces
– 2 zucchinis, cut into thick rounds
– 1 red onion, cut into wedges
– 1 yellow bell pepper, cut into thick slices
– ¼ cup olive oil
– 1 tablespoon fresh thyme leaves
– 1 tablespoon fresh rosemary, minced
– Salt and pepper to taste

Instructions:

1. Preheat the Oven:
Preheat your oven to 375°F (190°C).

2. Prepare the Chicken:
Pat the chicken dry with paper towels. In a small bowl, mix together the za’atar seasoning, olive oil, salt, and pepper. Rub this mixture all over the chicken, making sure to get it under the skin as well. Stuff the cavity of the chicken with lemon slices and minced garlic.

3. Roast the Chicken:
Place the chicken in a roasting pan and roast in the preheated oven for about 1 to 1 ½ hours, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.

4. Prepare the Vegetables:
While the chicken is roasting, prepare the vegetables. In a large bowl, toss the carrots, zucchinis, red onion, and yellow bell pepper with olive oil, thyme, rosemary, salt, and pepper.

5. Roast the Vegetables:
Arrange the vegetables on a baking sheet in a single layer. About 30 minutes before the chicken is done, place the vegetables in the oven and roast for 25-30 minutes, or until tender and slightly caramelized.

6. Serve:
Once the chicken is done, let it rest for 10 minutes before carving. Serve the carved chicken alongside the roasted vegetables. Garnish with additional fresh herbs if desired.
