3 pounds beef chuck roast

2 tablespoons vegetable oil
1 large onion, chopped
3 cloves garlic, minced
4 cups beef broth
1 cup red wine (optional)
1 tablespoon tomato paste
4 large carrots, peeled and cut into chunks
3 large potatoes, peeled and cut into chunks
2 stalks celery, chopped
2 bay leaves
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/4 cup fresh parsley, chopped

Instructions:

1. Preheat your oven to 300°F (150°C).

2. Season the beef chuck roast generously with salt and pepper on all sides.

3. In a large Dutch oven or heavy-bottomed pot, heat the vegetable oil over medium-high heat. Once the oil is hot, sear the beef roast on all sides until it is browned. This should take about 8-10 minutes. Remove the roast and set it aside on a plate.

4. In the same pot, reduce heat to medium and add the chopped onion and minced garlic. Sauté until the onions are translucent and fragrant, about 5 minutes.

5. Add the beef broth, red wine (if using), and tomato paste to the pot. Stir well to combine. Scrape any browned bits from the bottom of the pot to enhance the flavor of the broth.

6. Return the seared beef chuck roast to the pot. Add the carrots, potatoes, celery, bay leaves, thyme, and rosemary. Make sure the vegetables are submerged in the liquid around the roast.

7. Cover the pot with a lid and transfer it to the preheated oven. Let it cook for about 3-4 hours, or until the beef is fork-tender and the vegetables are cooked through.

8. Once done, remove the pot from the oven. Discard the bay leaves.

9. Sprinkle the chopped fresh parsley over the roast and vegetables before serving.

10. Serve the Yankee Pot Roast hot, with some of the delicious broth poured over the top. Enjoy this comforting, hearty dish with family and friends!
