Ingredients:
- 4 strips of bacon, chopped
- 2 large potatoes, diced
- 1 onion, finely chopped
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 2 cloves garlic, minced
- 1 tablespoon whiskey
- Salt and pepper, to taste
- 1/2 cup shredded cheddar cheese
- 2 green onions, sliced
- 4 eggs
Instructions:
- In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the skillet.
- Add the diced potatoes to the skillet and cook for about 10-12 minutes, until they begin to brown and become crispy.
- Add the chopped onion, red bell pepper, yellow bell pepper, and garlic to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender.
- Pour in the whiskey and stir to combine, allowing the alcohol to cook off for about 2 minutes.
- Season with salt and pepper to taste. Stir in the cooked bacon and sprinkle the shredded cheddar cheese over the top. Cover the skillet with a lid and let the cheese melt for about 2-3 minutes.
- In a separate pan, fry or scramble the eggs to your preference.
- Remove the skillet from heat and sprinkle the sliced green onions on top. Serve the vegetable and potato mixture with the eggs on the side or on top.
