– 1 large red onion, cut into wedges
– 2 cups of baby potatoes, halved
– 4 cloves of garlic, minced
– 2 tablespoons of olive oil
– 1 teaspoon of sea salt
– 1/2 teaspoon of black pepper
– 1 teaspoon of dried thyme
– 1 teaspoon of dried rosemary
– 1 tablespoon of balsamic vinegar

For the Gravy:
– 2 tablespoons of olive oil or vegan butter
– 1/4 cup of all-purpose flour
– 2 cups of vegetable broth
– 1 tablespoon of soy sauce or tamari
– 1 teaspoon of miso paste (optional for an extra depth of flavor)
– Salt and pepper to taste

Instructions###:

1. Preheat the oven to 425°F (220°C).

2. Prepare the Vegetables:
– In a large bowl, combine all the vegetables (butternut squash, Brussels sprouts, bell peppers, carrots, red onion, and baby potatoes).
– Add the minced garlic, olive oil, sea salt, black pepper, dried thyme, dried rosemary, and balsamic vinegar. Toss everything together until the vegetables are well-coated.

3. Roast the Vegetables:
