Ingredients ###

For the Marinade:
– 2 boneless, skinless chicken breasts, cubed
– 1 tablespoon soy sauce
– 1 tablespoon Shaoxing wine (or dry sherry)
– 1 teaspoon cornstarch

For the Sauce:
– 2 tablespoons soy sauce
– 1 tablespoon hoisin sauce
– 1 tablespoon rice vinegar
– 1 tablespoon sugar
– 2 teaspoons sesame oil
– 2 tablespoons chicken broth or water
– 1 teaspoon cornstarch

For the Stir-Fry:
– 2 tablespoons vegetable oil
– 1/2 cup unsalted roasted peanuts
– 10-12 dried red chilies
– 1 tablespoon Sichuan peppercorns
– 3 cloves garlic, minced
– 1 inch piece fresh ginger, grated
– 1/2 red bell pepper, chopped
– 1/2 green bell pepper, chopped
– 4 green onions, chopped (both white and green parts)

Instructions ###

1. Marinate the Chicken:
In a bowl, combine the chicken cubes with soy sauce, Shaoxing wine, and cornstarch. Mix well and let it marinate for at least 15 minutes.

2. Prepare the Sauce:
In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, sugar, sesame oil, chicken broth, and cornstarch. Set aside.

3. Cook the Chicken:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until fully cooked, about 5-6 minutes. Remove the chicken from the skillet and set aside.

4. Stir-Fry the Aromatics and Vegetables:
In the same skillet, add the remaining tablespoon of vegetable oil. Add the dried red chilies and Sichuan peppercorns, frying until fragrant, about 1-2 minutes. Be careful not to burn them.

5. Add the Peppers and Aromatics:
Add minced garlic, grated ginger, and chopped bell peppers. Stir-fry for 2-3 minutes until the peppers are just tender.

6. Combine Everything:
Return the cooked chicken to the skillet and pour in the sauce. Stir well to coat everything evenly. Add the roasted peanuts and chopped green onions. Cook for another 2-3 minutes until the sauce thickens and everything is well combined.

7. Serve:
Serve the Kung Pao Chicken hot over steamed white rice or noodles.
