Ukhodo: A Hearty Traditional Belarusian Soup for Comfort
Ukhodo is a traditional Belarusian soup, known for its nourishing and comforting properties. Made with a variety of vegetables and often enhanced with tender meat and tangy pickles, this soup is a perfect dish for chilly days. The blend of flavors from fresh dill, sour cream, and pickled vegetables provides a unique taste experience that is both hearty and satisfying.
Ingredients:
– 1 lb beef or pork, cubed
– 4 cups beef or chicken broth
– 1 large potato, diced
– 1 large carrot, grated
– 1 onion, finely chopped
– 3-4 pickles, chopped
– 2 cloves garlic, minced
– 1 bay leaf
– 1 cup fresh dill, chopped
– Salt and pepper, to taste
– 1 cup sour cream, plus extra for serving
– 1 tbsp vegetable oil
Instructions:
- In a large pot, heat the vegetable oil over medium heat. Add the cubed meat and cook until browned on all sides.
- Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent.
- Pour in the beef or chicken broth and bring to a boil. Reduce heat to a simmer, add the bay leaf, and let it cook for about 30 minutes.
- Add the diced potatoes to the pot and cook for another 10 minutes.
- Stir in the grated carrot and chopped pickles. Continue to simmer until the vegetables are tender, about 10-15 minutes more.
- Season with salt and pepper to taste. Add the chopped fresh dill and stir in the cup of sour cream until well combined.
- Remove the bay leaf and discard. Serve the soup hot, garnished with an extra dollop of sour cream and a sprinkle of fresh dill if desired.
