Ukhodo is a traditional Belarusian soup, known for its nourishing and comforting properties. Ingredients:
– 1 lb beef or pork, cubed
– 4 cups beef or chicken broth
– 1 large potato, diced
– 1 large carrot, grated
– 1 onion, finely chopped
– 3-4 pickles, chopped
– 2 cloves garlic, minced
– 1 bay leaf
– 1 cup fresh dill, chopped
– Salt and pepper, to taste
– 1 cup sour cream, plus extra for serving
– 1 tbsp vegetable oil

Instructions:

  1. In a large pot, heat the vegetable oil over medium heat. Add the cubed meat and cook until browned on all sides.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent.
  3. Pour in the beef or chicken broth and bring to a boil. Reduce heat to a simmer, add the bay leaf, and let it cook for about 30 minutes.
  4. Add the diced potatoes to the pot and cook for another 10 minutes.
  5. Stir in the grated carrot and chopped pickles. Continue to simmer until the vegetables are tender, about 10-15 minutes more.
  6. Season with salt and pepper to taste. Add the chopped fresh dill and stir in the cup of sour cream until well combined.
  7. Remove the bay leaf and discard. Serve the soup hot, garnished with an extra dollop of sour cream and a sprinkle of fresh dill if desired.
