Turkish Pide is a classic dish that originates from Turkey, known for its unique boat-shaped dough and savory toppings. Pide is often referred to as Turkish pizza and can be topped with a variety of ingredients like ground meat, cheese, spinach, and eggs. This recipe showcases the timeless appeal of Turkish cuisine, blending aromatic spices and flavorful fillings to create a delightful meal.

Ingredients:

For the Dough:

  • 500g all-purpose flour
  • 10g instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 250ml warm water
  • 3 tablespoons olive oil

For the Filling:

  • 250g ground lamb or beef
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 tomatoes, peeled and diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon sumac (optional)
  • Salt and pepper to taste
  • 1 egg (for brushing)
  • Fresh parsley, chopped (for garnish)

Instructions:

1. Prepare the Dough:

  1. In a large bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy.
  2. Add in the flour, salt, and olive oil. Mix well until the dough starts to form.
  3. Knead the dough on a floured surface for about 10 minutes until it’s smooth and elastic.
  4. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise for about 1 hour or until doubled in size.

2. Prepare the Filling:

  1. In a large skillet, heat some olive oil over medium heat. Add the chopped onion and garlic, sauté until they become translucent.
  2. Add the ground lamb or beef to the skillet. Cook until fully browned.
  3. Stir in the red bell pepper, tomatoes, cumin, paprika, sumac, salt, and pepper. Cook until the vegetables are tender and the flavors meld together. Remove from heat and let it cool slightly.

3. Assemble the Pide:

  1. Preheat your oven to 220°C (425°F).
  2. Divide the dough into 4 equal portions. Roll each portion into an oval shape on a lightly floured surface.
  3. Spoon the filling evenly onto each piece of dough, leaving a border around the edges.
  4. Fold the edges of the dough over the filling to create a boat shape. Pinch the ends to seal.
  5. Beat the egg and brush it over the edges of the dough for a golden finish.

4. Bake and Serve:

  1. Place the prepared Pides on a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for about 15-20 minutes or until the crust is golden and crispy.
  3. Remove from the oven and garnish with freshly chopped parsley.
  4. Serve warm and enjoy your Traditional Turkish Pide with Zesty Toppings!
