Ingredients:
– 4 medium zucchinis
– 1 lb ground beef
– 1 small onion, diced
– 2 cloves garlic, minced
– 1 red bell pepper, diced
– 1 packet taco seasoning
– 1/2 cup corn kernels (fresh, frozen, or canned)
– 1/2 cup black beans, drained and rinsed
– 1 cup shredded cheddar cheese
– 1/4 cup chopped fresh cilantro (optional)
– Salt and pepper to taste
– Olive oil
– Sour cream and salsa, for serving

Instructions:

1. Preheat the oven:
Preheat your oven to 375°F (190°C).

2. Prepare the zucchinis:
Wash the zucchinis thoroughly and slice them in half lengthwise. Using a spoon, scoop out the seeds and a little bit of the flesh to create shallow “boats.” Place the zucchini halves on a baking sheet, cut side up. Brush them lightly with olive oil and season with salt and pepper.

3. Cook the filling:
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and garlic, sautéing until they become translucent, about 2-3 minutes. Add the ground beef to the skillet, breaking it apart with a spatula as it cooks. Once the beef is browned, add the diced red bell pepper, corn kernels, and black beans. Mix in the taco seasoning and cook for an additional 5 minutes, until everything is well combined and heated through. Adjust seasoning with salt and pepper as needed.

4. Stuff the zucchinis:
Fill each zucchini boat with the beef and vegetable mixture, pressing it down slightly to ensure it adheres well. Top each zucchini boat generously with shredded cheddar cheese.

5. Bake:
Place the stuffed zucchinis in the preheated oven and bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.

6. Garnish and serve:
Remove the baking sheet from the oven and let the zucchini boats cool for a few minutes. Garnish with chopped fresh cilantro if desired. Serve warm with a dollop of sour cream and a side of salsa. Enjoy!

These Tex-Mex Zucchini Boats are a delicious and healthy option that combines the bold flavors of Tex-Mex cuisine with the nutritional benefits of zucchini. They’re easy to make and perfect for any occasion.
