– 1 lb large shrimp, peeled and deveined
– 2 bell peppers (red and yellow), sliced
– 1 zucchini, sliced
– 1 cup snow peas
– 1 onion, chopped
– 2 tablespoons vegetable oil

– 1 tablespoon ginger, grated
– 2 tablespoons soy sauce
– 2 tablespoons Szechuan peppercorns, ground
– 1 tablespoon chili paste
– 1 tablespoon rice vinegar

– 1/4 cup chicken broth
– 2 green onions, chopped (for garnish)

Instructions:

1. Marinate the Shrimp:
– In a bowl, combine the shrimp with half of the minced garlic, grated ginger, and 1 tablespoon of soy sauce. Mix well and let it marinate for 15 minutes.

– In a small bowl, mix together the remaining soy sauce, Szechuan peppercorns, chili paste, rice vinegar, sugar, cornstarch, and chicken broth. Set aside.

– Add the sliced bell peppers, zucchini, and snow peas. Stir-fry for about 4-5 minutes, until the vegetables are tender-crisp. Remove them from the skillet and set aside.

4. Cook the Shrimp:
– In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the marinated shrimp and stir-fry for 3-4 minutes, until they are pink and cooked through.

5. Combine and Serve:
– Return the vegetables to the skillet with the shrimp. Pour the prepared Szechuan sauce over the shrimp and vegetables, and toss everything together until well coated and heated through.
