Ingredients ###

6 bone-in, skin-on chicken thighs
1/2 cup soy sauce (shoyu)
1/4 cup brown sugar
1/4 cup water
2 tbsp mirin (Japanese sweet rice wine)
2 tbsp vegetable oil
4 cloves garlic, minced
1 inch fresh ginger, minced
1 medium onion, thinly sliced
2 green onions, chopped (for garnish)
Sesame seeds (for garnish)

Instructions ###

Step 1: Marinate the Chicken
1. In a large bowl, whisk together the soy sauce, brown sugar, water, mirin, garlic, and ginger until the sugar is dissolved.
2. Add the chicken thighs to the marinade, ensuring they are thoroughly coated. Cover the bowl and refrigerate for at least 1 hour, or overnight for maximum flavor.

Step 2: Prepare the Chicken
1. Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat.
2. Remove the chicken thighs from the marinade (reserve the marinade) and pat them dry with paper towels.
3. Place the chicken thighs skin-side down in the skillet, cooking until the skin is golden brown and crispy, about 6-8 minutes. Flip the chicken and cook for another 6-8 minutes on the other side.

Step 3: Simmer in the Sauce
1. Remove the chicken from the skillet and set aside.
2. In the same skillet, add the sliced onions and cook until they become soft and translucent, about 5 minutes.
3. Pour in the reserved marinade and bring to a boil. Reduce the heat to low and return the chicken to the skillet.
4. Cover and let simmer for 15-20 minutes, or until the chicken is fully cooked and tender.
