– 4 large bell peppers (any color)
– 1 lb ground beef or turkey
– 1 cup cooked rice
– 1 medium onion, finely chopped
– 2 cloves garlic, minced
– 1 can (14.5 oz) diced tomatoes, drained
– 1 cup tomato sauce
– 1 teaspoon Italian seasoning
– Salt and pepper to taste
– 1 cup shredded mozzarella cheese
– 2 tablespoons olive oil
– Fresh parsley for garnish

Instructions:

1. Preheat the oven to 375°F (190°C).

2. Prepare the bell peppers. Cut off the tops of the bell peppers and remove the seeds and membranes. Rinse the peppers under cold water and set them aside.
