Spicy Tofu with Mixed Veggies: A Flavorful Fix
This vibrant and spicy tofu dish, mixed with an array of colorful vegetables, is not only a feast for the eyes but also a delight for the taste buds. Ingredients:
- 1 block of firm tofu, pressed and cubed
- 1 red bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 1 cup broccoli florets
- 1 carrot, thinly sliced
- 1/2 cup snap peas
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon sriracha sauce (adjust to taste)
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 1 tablespoon water
- 2 tablespoons vegetable oil
- Sesame seeds for garnish
- Chopped green onions for garnish
- Salt and pepper to taste
- Cooked jasmine rice (optional)
Instructions:
- In a small bowl, mix together soy sauce, hoisin sauce, sriracha sauce, rice vinegar, and sesame oil. Set aside.
- In another small bowl, combine cornstarch and water to make a slurry. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until browned on all sides. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
- Add the broccoli, bell peppers, carrot, and snap peas to the skillet. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp.
- Return the tofu to the skillet and pour in the sauce mixture. Stir well to coat everything evenly.
- Give the cornstarch slurry a quick stir and add it to the skillet. Cook for another 2-3 minutes, stirring constantly until the sauce has thickened.
- Season with salt and pepper to taste.
- Garnish with sesame seeds and chopped green onions before serving. Serve hot, over cooked jasmine rice if desired.
