Spicy Tofu with Mixed Veggies: A Flavorful Fix

This vibrant and spicy tofu dish, mixed with an array of colorful vegetables, is not only a feast for the eyes but also a delight for the taste buds. Ingredients:

  • 1 block of firm tofu, pressed and cubed
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • 1/2 cup snap peas
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sriracha sauce (adjust to taste)
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 2 tablespoons vegetable oil
  • Sesame seeds for garnish
  • Chopped green onions for garnish
  • Salt and pepper to taste
  • Cooked jasmine rice (optional)

Instructions:

  1. In a small bowl, mix together soy sauce, hoisin sauce, sriracha sauce, rice vinegar, and sesame oil. Set aside.
  2. In another small bowl, combine cornstarch and water to make a slurry. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until browned on all sides. Remove from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
  5. Add the broccoli, bell peppers, carrot, and snap peas to the skillet. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp.
  6. Return the tofu to the skillet and pour in the sauce mixture. Stir well to coat everything evenly.
  7. Give the cornstarch slurry a quick stir and add it to the skillet. Cook for another 2-3 minutes, stirring constantly until the sauce has thickened.
  8. Season with salt and pepper to taste.
  9. Garnish with sesame seeds and chopped green onions before serving. Serve hot, over cooked jasmine rice if desired.
