Ingredients:

– 4 medium zucchinis
– 1 cup smoked mozzarella cheese, shredded
– 1/2 cup parmesan cheese, grated
– 1/2 cup cherry tomatoes, chopped
– 1/4 cup breadcrumbs
– 2 garlic cloves, minced
– 1 small onion, finely chopped
– 1 tablespoon olive oil
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– Salt and pepper to taste
– Fresh basil leaves for garnish

Instructions:

1. Preheat your oven to 375°F (190°C).

2. Prepare the zucchinis: Wash and trim the ends off the zucchinis. Cut them in half lengthwise and use a spoon to scoop out the centers, leaving about 1/4 inch of flesh to form the boats. Reserve the scooped-out flesh.

3. Prepare the stuffing: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté until softened, about 5 minutes. Add the reserved zucchini flesh and chopped cherry tomatoes. Cook for another 3-4 minutes until they soften.

4. Combine ingredients: Transfer the cooked vegetables to a mixing bowl. Add the shredded smoked mozzarella, grated parmesan, breadcrumbs, oregano, basil, salt, and pepper. Mix well to combine.

5. Stuff the zucchinis: Place the zucchini boats on a baking sheet lined with parchment paper. Spoon the cheese and vegetable mixture into each zucchini boat, pressing lightly to pack the filling in.

6. Bake: Place the baking sheet in the preheated oven and bake for about 25-30 minutes, until the zucchinis are tender and the cheese is melted and bubbly.

7. Garnish and serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves before serving.
