Vietnamese Spring Rolls, also known as Gỏi Cuốn, are a fresh and healthy dish that combines shrimp, vegetables, herbs, and rice noodles wrapped in delicate rice paper. These rolls are typically served with a savory hoisin peanut dipping sauce. They offer a refreshing combination of flavors and textures, making them a perfect appetizer or light meal.

Ingredients:

For the Spring Rolls:
– 12 pieces rice paper wrappers
– 1/2 lb shrimp, peeled and deveined
– 4 oz rice vermicelli noodles
– 1 medium carrot, julienned
– 1/2 cucumber, julienned
– 1 cup fresh mint leaves
– 1 cup fresh cilantro leaves
– 1 cup fresh basil leaves
– 1 cup shredded lettuce

For the Hoisin Peanut Dipping Sauce:
– 1/2 cup hoisin sauce
– 1/4 cup peanut butter
– 2 tbsp soy sauce
– 1 tbsp rice vinegar
– 1 garlic clove, minced
– 1/4 cup water
– Crushed peanuts for garnish

Instructions:

For the Spring Rolls:
1. Bring a pot of water to a boil. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Remove from water, let cool, and slice in half lengthwise.
2. In the same pot, cook the rice vermicelli noodles according to package instructions. Drain and rinse with cold water.
3. Prepare a large bowl of warm water. Dip one rice paper wrapper into the water for about 5 seconds to soften. Lay it flat on a clean surface.
4. On the lower third of the wrapper, place a small handful of rice noodles, some carrot, cucumber, lettuce, and herbs. Top with 2-3 shrimp halves.
5. Fold the sides of the wrapper over the filling, then roll tightly from the bottom up. Repeat the process with the remaining wrappers and fillings.

For the Hoisin Peanut Dipping Sauce:
1. In a small bowl, whisk together hoisin sauce, peanut butter, soy sauce, rice vinegar, and minced garlic. Gradually add water until the sauce reaches your desired consistency.
2. Garnish with crushed peanuts.

Serving:
1. Arrange the spring rolls on a serving platter.
2. Serve with the hoisin peanut dipping sauce on the side for dipping.
