Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable broth or water
  • 1 block (14 oz) firm tofu, pressed and cubed
  • 2 tablespoons olive oil, divided
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • Fresh parsley or cilantro for garnish

Instructions:

  1. Cook the Quinoa: Rinse the quinoa under cold water. In a medium pot, bring the vegetable broth or water to a boil. Add the quinoa and reduce the heat to low. Cover and simmer for about 15 minutes, or until the quinoa is tender and has absorbed all the liquid. Fluff with a fork and set aside.
  2. Prepare the Tofu: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the cubed tofu and cook until it becomes golden brown on all sides, about 5-7 minutes. Sprinkle the smoked paprika, ground cumin, turmeric, salt, and pepper over the tofu and stir well. Continue to cook for another 2-3 minutes to toast the spices. Remove the tofu from the skillet and set aside.
  3. Sauté the Vegetables: In the same skillet, heat the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the diced red bell pepper and zucchini. Cook until the vegetables are tender, about 5 minutes.
  4. Combine Ingredients: Add the cherry tomatoes and cooked quinoa to the skillet. Stir well to combine all the ingredients. Cook for another 2-3 minutes until the tomatoes are slightly softened.
  5. Finish and Serve: Return the spiced tofu to the skillet and gently mix everything together. Cook for an additional 2 minutes, just to heat through. Remove from heat and stir in the chopped green onions. Garnish with fresh parsley or cilantro and serve warm.
