Quivut Quesadilla Supreme: A Delightful Fusion of Texture and Flavors

Description:
Quivut Quesadilla Supreme is a tantalizing dish that brings an exciting twist to the classic quesadilla. The name “Quivut” is inspired by a fusion of Mexican culinary traditions and an innovative twist. This sumptuous quesadilla is packed with savory ingredients, including succulent chicken, vibrant veggies, and a blend of gooey cheeses that melt in your mouth. Perfect for lunch, dinner, or a hearty snack, this dish offers a satisfying and flavorful experience.

Ingredients:

2 large flour tortillas
1 cup cooked and shredded chicken (preferably seasoned)
1/2 cup bell peppers (red, green, and yellow), thinly sliced
1/2 cup red onion, thinly sliced
1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
1/4 cup crumbled queso fresco (optional)
1/4 cup corn kernels (optional)
1 avocado, sliced
2 tablespoons olive oil
1 tablespoon chopped fresh cilantro
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper, to taste
Sour cream and salsa, for serving

Instructions:

1. Prepare the Chicken and Vegetables:
– In a medium bowl, combine the shredded chicken with the ground cumin, chili powder, salt, and pepper. Mix well to ensure the chicken is evenly coated with the spices.
– Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the bell peppers and red onion, and sauté until they are soft and slightly caramelized (about 5-7 minutes). Remove from heat and set aside.

2. Assemble the Quesadilla:
– Lay one tortilla flat on a clean surface. Sprinkle an even layer of shredded cheese over the entire tortilla.
– Add the seasoned chicken, sautéed vegetables, corn kernels (if using), and a sprinkle of queso fresco.
– Add avocado slices evenly on top of the filling. Sprinkle with fresh cilantro.
– Top with another layer of shredded cheese. Place the second tortilla on top to cover the filling.

3. Cook the Quesadilla:
– Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Carefully transfer the assembled quesadilla to the skillet.
– Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese is melted inside.
– Press down lightly with a spatula to help the quesadilla hold together as the cheese melts.

4. Serving:
– Once fully cooked, transfer the quesadilla to a cutting board and allow it to cool slightly. Cut the quesadilla into wedges.
– Serve warm, with sour cream and salsa on the side for dipping.

Enjoy the Quivut Quesadilla Supreme!
