Ingredients:

– 1 cup quinoa
– 2 cups water
– 1/2 cup walnuts, chopped
– 1 red bell pepper, diced
– 1 cucumber, diced
– 1 carrot, shredded
– 1/2 cup cherry tomatoes, halved
– 1/4 cup red onion, finely diced
– 1 avocado, sliced
– 1/4 cup fresh parsley, chopped
– 1/4 cup crumbled feta cheese (optional)
– 4 large whole wheat tortillas
– Salt and pepper to taste
