Instructions:

Quinoa Pudding:

Fig Compote:
1. In a small saucepan, combine the chopped figs, fresh orange juice, water, honey or maple syrup, and ground cinnamon. Bring to a boil over medium heat.
2. Lower the heat and simmer for about 10 minutes, stirring occasionally, until the figs break down and the mixture thickens.
3. Stir in the lemon zest and cook for another 2 minutes.
4. Remove from heat and let it cool. The compote will continue to thicken as it cools.
