Ingredients:

For the Quinoa and Shrimp Medley:
– 1 cup quinoa
– 2 cups water or vegetable broth
– 1 lb shrimp, peeled and deveined
– 1 tbsp olive oil
– 1 small red bell pepper, diced
– 1 small cucumber, diced
– 1/4 cup red onion, finely chopped
– 1/4 cup fresh mint leaves, roughly chopped
– Salt and pepper to taste

For the Mint-Lime Vinaigrette:
– 1/4 cup fresh lime juice (about 2 limes)
– 2 tbsp olive oil
– 1 tbsp honey or agave syrup
– 1 tbsp fresh mint, finely chopped
– 1 garlic clove, minced
– Salt and pepper to taste

Instructions:

1. Cook the Quinoa:
– Rinse the quinoa under cold water.
– In a medium saucepan, bring 2 cups of water or vegetable broth to a boil. Add the rinsed quinoa.
– Reduce to a simmer, cover, and cook for about 15 minutes or until all the liquid is absorbed. Remove from heat and let it stand, covered, for 5 minutes. Fluff with a fork and set aside.

2. Prepare the Shrimp:
– In a large skillet, heat 1 tbsp of olive oil over medium heat.
– Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side, or until the shrimp is pink and opaque. Remove from heat.

3. Combine the Medley:
– In a large bowl, combine the cooked quinoa, shrimp, red bell pepper, cucumber, red onion, and chopped mint leaves.

4. Make the Mint-Lime Vinaigrette:
– In a small bowl, whisk together the lime juice, olive oil, honey or agave syrup, chopped mint, minced garlic, salt, and pepper. Adjust seasoning to taste.

5. Dress the Medley:
– Pour the mint-lime vinaigrette over the quinoa and shrimp mixture. Toss gently to combine and ensure everything is evenly coated.

6. Serve:
– Serve the quinoa and shrimp medley immediately while it’s still fresh. You can also chill it in the refrigerator for 15-20 minutes if you prefer a cold salad.
