Ingredients:

For the Quinoa and Shrimp Medley:
– 1 cup quinoa
– 2 cups water or vegetable broth
– 1 lb shrimp, peeled and deveined
– 1 tbsp olive oil
– 1 small red bell pepper, diced
– 1 small cucumber, diced
– 1/4 cup red onion, finely chopped
– 1/4 cup fresh mint leaves, roughly chopped
– Salt and pepper to taste

For the Mint-Lime Vinaigrette:
– 1/4 cup fresh lime juice (about 2 limes)
– 2 tbsp olive oil
– 1 tbsp honey or agave syrup
– 1 tbsp fresh mint, finely chopped
– 1 garlic clove, minced

– In a large bowl, combine the cooked quinoa, shrimp, red bell pepper, cucumber, red onion, and chopped mint leaves.

4. Make the Mint-Lime Vinaigrette:
– In a small bowl, whisk together the lime juice, olive oil, honey or agave syrup, chopped mint, minced garlic, salt, and pepper. Adjust seasoning to taste.

5. Dress the Medley:
– Pour the mint-lime vinaigrette over the quinoa and shrimp mixture. Toss gently to combine and ensure everything is evenly coated.

6. Serve:
