2 cups of shredded kale
1 red bell pepper, diced

1/2 cup of cherry tomatoes, halved

1/4 cup of chopped walnuts
1/4 cup of crumbled feta cheese
2 tablespoons of olive oil
1 tablespoon of lemon juice
1 tablespoon of apple cider vinegar

Instructions:
1. Cook the quinoa: Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa and water.
