Ingredients

# For the Teriyaki Sauce
– 1/2 cup soy sauce
– 1/4 cup honey
– 1/4 cup rice vinegar
– 2 tablespoons mirin (Japanese sweet rice wine)
– 2 cloves garlic, minced
– 1 tablespoon fresh ginger, grated
– 1 tablespoon cornstarch
– 1/4 cup water

– 4 fish fillets (salmon or cod work well)

– Sliced green onions, for garnish

Instructions

Prepare the Teriyaki Sauce:
1. In a small saucepan over medium heat, combine the soy sauce, honey, rice vinegar, mirin, garlic, and ginger.
2. In a separate bowl, whisk together the cornstarch and water until smooth, then add it to the saucepan.
3. Bring the mixture to a simmer, stirring constantly until the sauce thickens. Remove from heat and let it cool slightly.

Marinate the Fish:
1. Season the fish fillets with salt and pepper.
2. Place the fish in a shallow dish or zip-lock bag and pour half of the teriyaki sauce over the fish. Reserve the other half of the sauce for later.
