Ingredients###:
For the Lamb:
– 4 New Zealand lamb chops
– 2 cloves garlic, minced
– 1 tablespoon fresh rosemary, finely chopped
– 1 tablespoon olive oil
– Salt and pepper to taste

For the Tomato-Zucchini Ratatouille:
– 2 tablespoons olive oil
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 1 red bell pepper, diced
– 1 green bell pepper, diced
– 1 large zucchini, diced
– 2 ripe tomatoes, diced
– 1 tablespoon tomato paste
– 1 teaspoon dried oregano
– Salt and pepper to taste
– Fresh basil leaves, for garnish

Instructions###:
Preparing the Lamb:
1. In a small bowl, mix the minced garlic, fresh rosemary, olive oil, salt, and pepper.
2. Rub the mixture onto the lamb chops, ensuring they are well coated. Let them marinate for at least 30 minutes.
3. Preheat a grill or a grill pan over medium-high heat.
4. Cook the lamb chops for about 4-5 minutes on each side, or until they reach your desired level of doneness.
5. Remove from heat and allow to rest for a few minutes before serving.

Making the Ratatouille:
1. In a large skillet, heat the olive oil over medium heat.
2. Add the finely chopped onion and cook until translucent, about 5 minutes.
3. Stir in the minced garlic and cook for another minute.
4. Add the diced red and green bell peppers and cook until they begin to soften, about 5 minutes.
5. Stir in the diced zucchini, tomatoes, and tomato paste. Mix well.

8. Taste and adjust the seasoning as needed.
