Ingredients:
– 1 1/2 cups Arborio rice
– 8 cups vegetable or chicken broth
– 2 cups mushrooms, sliced (cremini, button, or a mix)
– 1 small onion, finely chopped
– 3 cloves garlic, minced
– 1/2 cup dry white wine
– 1 cup Parmesan cheese, grated
– 2 tablespoons olive oil
– 2 tablespoons butter
– Salt and pepper to taste

Instructions:

6. Add the Broth:

– Continue this process until the rice is creamy and al dente (about 18-20 minutes).

7. Combine with Mushrooms:
– Stir back in the sautéed mushrooms.
– Add the grated Parmesan cheese, stirring until melted and fully incorporated.
– Season with salt and pepper to taste.
