Ingredients:
– 2 cups shredded cooked chicken
– 2 cups red enchilada sauce
– 1 cup shredded Mexican blend cheese
– 1/2 cup chopped onion
– 12 corn tortillas
– 1/4 cup chopped cilantro
– 1/2 cup sour cream
– 1 ripe avocado, sliced
– 1 lime, cut into wedges
– Salt and pepper to taste
– Olive oil for cooking

Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a skillet, heat a small amount of olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
