Ingredients:

For the Kiwi-Infused Grilled Chicken:
– 4 boneless, skinless chicken breasts
– 2 ripe kiwis, peeled and pureed
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– Juice of 1 lime
– 1 teaspoon ground cumin
– 1 teaspoon paprika
– Salt and pepper to taste

For the Fresh Kiwi Salsa:
– 3 ripe kiwis, peeled and diced
– 1/2 red bell pepper, diced
– 1/4 cup red onion, finely chopped
– 1/4 cup fresh cilantro, chopped
– Juice of 1 lime
– Salt to taste

Instructions:

For the Kiwi-Infused Grilled Chicken:
1. In a bowl, combine the kiwi puree, olive oil, minced garlic, lime juice, ground cumin, paprika, salt, and pepper.
2. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the kiwi marinade over them. Make sure all the chicken is evenly coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best results.
3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the remaining marinade.
4. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. The internal temperature should reach 165°F (74°C).
5. Once cooked, remove the chicken from the grill and let it rest for a few minutes before serving.

For the Fresh Kiwi Salsa:
1. In a medium bowl, combine the diced kiwis, red bell pepper, red onion, and fresh cilantro.
2. Drizzle with lime juice and add salt to taste.
3. Toss gently to combine all ingredients. Let the salsa sit for about 10 minutes to allow the flavors to meld together.

To Serve:
1. Place the grilled chicken on a serving platter or individual plates.
2. Spoon a generous amount of fresh kiwi salsa over the top of each chicken breast.
