Kadai Gosht: Flavorful Indian Spiced Goat Curry
Kadai Gosht is a traditional Indian dish that brings together succulent pieces of goat meat cooked with aromatic spices in a rich and flavorful tomato-based gravy. This dish is known for its robust flavors and is a favorite in many households, enjoyed with naan, roti, or steamed rice. The term “Kadai” refers to the cooking vessel used, which is a thick, circular, and deep pot, often made of cast iron, enhancing the dish’s unique taste.
Ingredients:
For the Marinade:
1. 500g goat meat, cut into pieces
2. 1 cup thick yogurt
3. 1 tbsp ginger-garlic paste
4. 1 tsp turmeric powder
5. 1 tsp red chili powder
6. Salt to taste
For the Curry:
1. 3 tbsp oil
2. 2 medium onions, finely chopped
3. 2 large tomatoes, pureed
4. 1 tbsp ginger-garlic paste
5. 2 green chilies, slit
6. 1 tsp cumin seeds
7. 1 tsp coriander powder
8. 1 tsp garam masala
9. 1 tsp black pepper powder
10. 1 tsp turmeric powder
11. 1 tsp red chili powder
12. 1 tsp kasuri methi (dried fenugreek leaves)
13. Fresh coriander leaves, chopped (for garnish)
Instructions:
Step 1: Marinating the Goat Meat
1. In a large bowl, combine the yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt.
2. Add the goat meat to the mixture and coat well.
3. Cover the bowl and let it marinate in the refrigerator for at least 1-2 hours, or overnight for best results.
Step 2: Preparing the Curry
1. Heat oil in a kadai or heavy-bottomed pot over medium heat.
2. Add cumin seeds and let them sizzle for a few seconds until fragrant.
3. Add the finely chopped onions and sauté until they turn golden brown.
4. Stir in the ginger-garlic paste and green chilies. Cook for another 2-3 minutes until the raw aroma disappears.
5. Add the pureed tomatoes and cook until the oil begins to separate from the mixture, about 5-7 minutes.
6. Add coriander powder, garam masala, black pepper powder, turmeric powder, and red chili powder. Mix well and cook for another 2 minutes to blend the spices.
Step 3: Cooking the Goat Meat
1. Add the marinated goat meat to the kadai and stir well to coat the meat with the spice mixture.
2. Cover the pot, reduce the heat to low, and let it cook for about 45-60 minutes, stirring occasionally, until the meat is tender. You may need to add a little water if the curry becomes too thick.
3. Once the meat is cooked, sprinkle kasuri methi over the curry and mix well.

1. Transfer the Kadai Gosht to a serving dish.
2. Garnish with freshly chopped coriander leaves.
3. Serve hot with naan, roti, or steamed rice.
