This dish is perfect for a quick yet fulfilling meal that’s bursting with umami and nutrient-rich vegetables.
Ingredients
– 8 oz Hokkien noodles
– 2 cups bok choy, chopped
– 1 cup shiitake mushrooms, sliced
– 1/2 cup carrots, julienned
– 2 cloves garlic, minced
– 3 tablespoons soy sauce
– 1 tablespoon oyster sauce
– 1 tablespoon hoisin sauce
– 1 tablespoon vegetable oil
– 1/2 teaspoon sesame oil
– 1/4 cup chicken or vegetable broth
– 1 teaspoon cornstarch (optional, for thickening)
– 1/4 teaspoon white pepper
– 2 green onions, chopped (for garnish)
– Sesame seeds (optional, for garnish)
Instructions
1. Prepare the noodles. Cook the Hokkien noodles according to the package instructions. Drain and set aside.
2. Prepare the sauce. In a small bowl, mix together the soy sauce, oyster sauce, hoisin sauce, and sesame oil. If you prefer a thicker sauce, dissolve the cornstarch in the broth before adding it to the mix.
3. Cook the vegetables. Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
4. Add mushrooms and carrots. Toss in the shiitake mushrooms and julienned carrots, cooking until they start to soften, about 2-3 minutes.
5. Add the bok choy. Stir in the chopped bok choy and cook for another 2 minutes, or until the bok choy starts to wilt.
6. Combine noodles and sauce. Add the cooked Hokkien noodles to the wok. Pour the sauce mixture over the noodles and vegetables, tossing everything together to coat evenly.
7. Simmer and thicken. Cook for another 2-3 minutes, allowing the flavors to meld and the sauce to thicken. If using the cornstarch, ensure the sauce has thickened to your liking.
8. Season. Sprinkle the white pepper over the dish and toss to combine.
9. Garnish and serve. Remove from heat and garnish with chopped green onions and sesame seeds, if using. Serve hot.
Enjoy your Hokkien Fried Noodles with the delightful combination of hearty shiitake mushrooms and fresh bok choy for a meal that’s both satisfying and nutritious!
