Herb-Roasted Brussels Sprouts with Balsamic Glaze

Ingredients:
– 1.5 pounds Brussels sprouts, trimmed and halved
– 3 tablespoons olive oil
– 1 tablespoon fresh rosemary, chopped
– 1 tablespoon fresh thyme, chopped
– Salt and pepper to taste
– 1/4 cup balsamic vinegar
– 1 tablespoon honey or maple syrup
– 1/4 cup grated Parmesan cheese (optional)
Instructions:
1. Preheat your oven to 400°F (200°C).
2. In a large mixing bowl, toss the Brussels sprouts with olive oil, rosemary, thyme, salt, and pepper. Make sure the Brussels sprouts are evenly coated with the herbs and oil.
3. Spread the Brussels sprouts in a single layer on a baking sheet. Make sure there is enough space between them so they roast properly.
4. Roast in the preheated oven for 25-30 minutes, or until the Brussels sprouts are golden brown and crispy on the edges. Stir halfway through to ensure even roasting.
