Ingredients:
- 2 tablespoons olive oil
- 1 large Vidalia onion, diced
- 3 cloves garlic, minced
- 1 large bunch of kale, stems removed and leaves chopped
- 4 cups vegetable broth
- 1 large potato, peeled and cubed
- 1 cup heavy cream
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- Salt and freshly ground black pepper, to taste
- Crusty bread, for serving (optional)
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the diced Vidalia onion and sauté until soft and translucent, about 5 minutes.
- Add the minced garlic and cook for another minute, stirring frequently to prevent burning.
- Stir in the chopped kale and cook until wilted, about 4-5 minutes.
- Add the cubed potato and vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the potato is tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup in batches to a regular blender and blend until smooth. Return the soup to the pot.
- Stir in the heavy cream, fresh thyme, and rosemary. Simmer for an additional 5 minutes to let the flavors meld together.
- Season with salt and freshly ground black pepper to taste.
- Serve hot, with crusty bread on the side if desired. Enjoy this hearty, velvety kale and Vidalia onion soup!
