Hearty Ukrainian Pickled Cabbage and Potato Soup

Ingredients:
– 2 tablespoons of butter
– 1 large onion, diced
– 2 carrots, peeled and sliced
– 2 stalks of celery, diced
– 3 cloves of garlic, minced
– 4 cups of vegetable or chicken broth
– 2 cups of sauerkraut (pickled cabbage), drained
– 4 medium potatoes, peeled and cubed
– 1 bay leaf
– 1 teaspoon of caraway seeds
– Salt and pepper to taste
– 1 tablespoon of fresh dill, chopped (optional)
– Sour cream for serving (optional)
Instructions:
1. In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables are soft and the onion is translucent, about 5-7 minutes.
2. Add the garlic and cook for another minute until fragrant.
3. Pour in the broth and bring to a simmer. Add the sauerkraut, potatoes, bay leaf, and caraway seeds. Season with salt and pepper.
